Making Pesto

Pomaria Pesto

 

4 handfuls of greens from the garden

(Silverbeet, spinach, basil, parsley, spring onions and rocket)

½ cup olive oil

¼ cup sun dried tomatoes

¾ cup of cashew nuts

1 cup of grated parmesan cheese

Squeeze ½ a lemon

Add some rock salt

 

Blend all ingredients in a food processor until your desired consistency.

Yum! Spread on your favourite crackers or bread.

Enjoy the taste of Pomaria pesto.
